Watermelon rind curry

Ingredients: Watermelon (white flesh portion cut into bite sized chunks) – 1 cup..This is normally thrown away after eating the pink flesh of water melon.
Salt – 1/4 tsp or per taste
Sambar powder 1/2 tsp
oil – 1/2 tsp
mustard seeds – 2 pinches
Urad dal – 1/2 tsp

Method: In a thick bottomed vessel heat the oil. When hot add the mustard seeds. As they splutter, add the urad dal and fry till they turn golden. Add the curry leaves. Add the watermelon white chunks and the sambar powder and salt. Mix well and cook it covered in low flame for 7-8 minutes. Check if its cooked or cook for 2/3 minutes more. No need to add extra water as the white flesh leaves more water on its own.
This dish will be a bit crunchy and little sweet and would taste good. Serve hot with rice or roti.
