Maida – 300 gms
Curd – 1 cup
Baking soda – 1/2 tsp
Sugar – 150-180 gms
Baking powder – 1 1/4 tsp
Cooking oil – 1/2 cup
Vanilla essence – 1 1/2 tsp
Milk 1tbsp
Method: Method:
Beat sugar and curd until sugar completely dissolves.
Add baking powder, baking soda to this mixture and mix well.
Let it rest for 5 minutes.The mixture will be bubbly and frothy.
Meanwhile,Sieve maida and keep aside. Now add cooking oil, vanilla essence and mix well.
Slowly add maida in small portions at a time and blend with wet ingredients.
Whisk it gently till all the ingredients mix together to form a creamy mixture.
Preheat oven to 200 C for 10 mins. Grease the baking pan,add a spoonful of dry flour, tap and turn the flour in the pan, so as to coat the pan with flour (dusting of pan with flour) and pour the batter
Bake in preheated oven at 200 degree C for 10 mins, then reduce temperature to 180 deg C and bake it for 20 minutes
Now gently brush the surface of cake with around 1 tbsp of milk,and bake the cake further for around 8-10 minutes.
Check by pricking the toothpick in the center.If it comes out clean the cake is done.
Allow it to cool for 5 minutes and then transfer the cake on the cooling rack.
Slice it after an hour, and enjoy moist, soft, delicious vanilla cake
dear nita madam, i would like to know if all the cakes that u suggest can be done in a pressure cooker also??.. if so what is the procedure.
i know of 1 method, to put acup of salt in the cooker & keep the cake batter on top, without whistle… does this really works. i do have ur receipies of making cakes, but can u please tell me an alternative method for cooking it. instead of an oven. i do not have a convection oven. only microwave….i need a reply asap. please…
dear ma’m i had attand ur egg less cake classes .my problab is first time my cake ready on time but now it is not ready on doted time ,it take 1o-15 minute more .and some time it bake only side and remain part part leave row..what can i do?

i have done this cake in pressure cooker only it came out very nicely. definitely u can try out this. make preparations as nita mam gave here. place the empty pressure cooker on the stove with medium heat then sprinkle some baking soda in the cooker to avoid spoiling of cooker and to avoid the smell also. the place an empty pot(which comes with ur cooker) on the top of the empty pot u can place the cake tin which is having batter. for 5 min maintain the same heat.. afterwards turn the burner into low heat(not very low) cook for 35 mins. then u can check the cake as mam told. believe me it comes good. i have tried 3 times. perfect. all the best. try it.

We have made your Egg less cake today in convaction mode. Temperature was was set to 200 C. for 10 minutes but unfortunately top layer of the cake was burned but bottom side remained uncooked so please guide us what mistake we would have made.

you need to preheat your oven (Convection mode) before baking the cake.
The temperature needed is 180 degree C and time required is between 20-25 minutes. If your cake always turn out to be cooked from outside and uncooked from inside then follow this rule…after baking cake for 20 minutes, cover the cake with aluminum foil and bake further for 5-8 minutes.That way the crust of the cake wont turn too brown (over cooked) and the cake will cook better from inside.Hope this helps !
