Ingredients:
- Eggs 2
- Non-hydrogenated margarine Nuvel
- 30 ml (2 tbsp)
- Brown sugar, sugar, honey, fructose, or fruit puree 80 ml (1 / 3 cup)
- Grated carrots 500 ml (2 cups)
- Chopped walnuts 60 ml (1 / 4 cup)
- Cinnamon 5 ml (1 tsp)
- salt 1 pinch
- Vanilla 5 ml (1 tsp)
- Milk (2% and less m.g.) 250 ml (1 cup)
- Whole wheat flour with kamut flour, rye or oats 500 ml (2 cups)
Method:
- Mix the batter in the first 9 ingredients by adding one by one in the order shown
- Mix in another bowl the flour and baking powder
- Add this mixture to the first and stir gently until the mixture is smooth
- Place in a greased square pan baking
- Bake at 180 º C (350 º F) about 50 minutes
- Serve plain or with frosting
