My friend Jagruti, recently baked and blogged about Whole wheat cookies (yes, No All purpose flour at all!) with nuts and oats.The cookies looked Yum and the recipe was a no fuss, straight forward one! It is so simple to make that my 9 year old kid insisted to make it on his own..and he did it too ….Of course I stood beside him as his sous-chef (Role reversal, yeah!), helping him locate the ingredients, double checking the measurements of ingredients and at the end, taking out the hot tray from the oven.Rest everything was handled by the kid
All went well (Thankfully!) and a batch of crunchy cookies is here to relish!
Here is the recipe shared by Jagruti . We had to make few changes in original recipe going with the availability of ingredients.
Honestly speaking the cookies didnt looked as gorgeous as Jagruti’s but they tasted damn good. I guess the reason behind the difference in texture, was that , instead of Cashew nuts we added almond flour (I didnt had enough of cashews).We used lesser butter and sugar (I am paranoid when I use these two ingredients while baking). Also as the kid handled the dough and rolled the cookies, it might have affected the texture…but let me assure you , these tasted a lot like our Indian ‘Attey kay laddoo’, only that these were flattish and crunchy
So go ahead and bake a batch of these wholewheat, almond / cashew nut with oats, cookies and enjoy with a hot steaming cup of tea or coffee!
