Carrot cake

Ingredients:

  • Eggs 2
  • Non-hydrogenated margarine Nuvel
  • 30 ml (2 tbsp)
  • Brown sugar, sugar, honey, fructose, or fruit puree 80 ml (1 / 3 cup)
  • Grated carrots 500 ml (2 cups)
  • Chopped walnuts 60 ml (1 / 4 cup)
  • Cinnamon 5 ml (1 tsp)
  • salt 1 pinch
  • Vanilla 5 ml (1 tsp)
  • Milk (2% and less m.g.) 250 ml (1 cup)
  • Whole wheat flour with kamut flour, rye or oats 500 ml (2 cups)

Method:

  • Mix the batter in the first 9 ingredients by adding one by one in the order shown
  • Mix in another bowl the flour and baking powder
  • Add this mixture to the first and stir gently until the mixture is smooth
  • Place in a greased square pan baking
  • Bake at 180 º C (350 º F) about 50 minutes
  • Serve plain or with frosting
